If you mean a nonspecific Sunday. You could say "a Sunday".

The second one is not right at all, and the first one kind of misses the mark a bit. You could say:
We arrived there on Sunday.
It was Sunday when we arrived there.

The first is correct, but not the best. The 2nd sentence is just wrong. why not just say "We arrived Sunday". Or "It was Sunday the day we arrived"
