I like Legolas. Best sequence in the film was him climbing a giant elephant all by himself and bringing it down.

Eowyn.  She's the woman from Rohan who pretended to be a man so she could fight.  But honestly, LotR really isn't about character works so much as it's about the intricate worldbuilding.
