There's a highly regarded program in Mondulkiri Province, Cambodia, for rehabbing retired elephants which needs volunteers. Elephant Valley Project - http://www.elephantvalleyproject.org/

Check out wildlife organizations online, such as World Wildlife Fund, etc. Lots of programs need volunteers.

If you have a professional qualification, you can always find volunteer work with animals.  Just network through your university.  If you have no veterinary training, you can still work with animals but it will be expensive.  Charities take overseas volunteers to help pay their running costs.  Unqualified volunteers have to be trained.  Besides, these are the kinds of jobs that locals would love to do for less than it would cost to feed and house you.

There are undoubtedly charities that would support this kind of thing. But at the moment (see - global pandemic), there won't be any opportunities for this.
