Why can't the NFL pump crowd noses digital sound too it's max so don't hear all the players call signals what they're saying?

Believe it or not, the league mandated the decibel level at which stadiums can pump the noise at - 75 decibels. There's supposed to be a league official present at each stadium during a game monitoring the noise level.

They could but it's more interesting when you can hear the interactions.

I kinda wish they wouldn't do the crowd noise at all so you could hear everything

You could always hear the players call the signals. Thats what the microphones on the filed are for.
