In France are other food elements such as raspberries, chocolate, pepper, spices, added to wine during the production process?

Not in our traditional wine, either it is red, rosé (pink wine) or white.
However for make a kind of cocktail called: Sangria, sugar and cinnamon are added to the wine ( red), for make it. Then some slices of lemon and orange macerated in it.
But it has nothing to do with the traditional wines: Bordeaux, Bourgogne, Côtes du Rhone, etc ... Sangria is just a beverage, that is drunk especially in the summer.

Often wines are described as having "notes" of raspberries, tobacco, chocolate, etc. These alleged flavors result from the fermentation and grape type, not additives.
Just give me heady oak, nothing else.
