Dangerous heater situation ? Was the wrong valve opened too high ? ?

Not sure why i cant post pictures.  Basically,  i complained about the water heater making noises and he turned the nozzle on the top too high and now i feel like it was a dangerous thing to do cause if he put too much pressure , the tank may blow up, righ ? Now the water is coming out hot too faster than usual but the temperature controls were not even moved, only the top nozzle to turn the water off and on.

If your house has a pressure regulator at all, it's by the water meter - not the water heater.

There's typically only one valve on top, and that's to fill the tank.  It's supposed to be all the way open.

There's a separate safety valve to keep the pressure from going too high.  It's not adjustable, so it isn't likely that he touched it at all.

I don't think you have to worry.
