Because the pantheon of documented exorcisms is mostly female. Some will say this is because the Catholic Church is inherently intolerant of women and girls. Others point to families being more willing to admit it when they think a girl is "possessed" (because in the circles that believe in this stuff they're still counting on the boys to support the aging parents in later life). But in terms of films, it's just "sexier" when this stuff is happening to a female. It's why most horror movies focus on female victims, why most serial killer movies involve female victims and why it's still pretty hard to pitch a concept where a man is as tortured as a woman is. Sadism against females is something both men and woman have had a prurient interest in going all the way back to the witch hunt hysterias of the dark ages.

Can't speak for all movies, but The Exorcist movie you took the picture from is actually based on a series of real events of a boy who was demonically possessed. They changed the name and the gender in order to protect his identity, but thanks to the internet, he was found out and unfortunately was bullied. He is still alive today.

There are several books and videos on males who were possessed, not just females. Hollywood most likely chose to make the most of them female because it is more attractive and they can play on the extremes of an "innocent young female" being possessed by the opposite -a dark evil being.

Being over emotional is a female trait however I do believe the original story had a boy in it.
