I made oxtail soup in a 4qt pan the recipe called for a 4qt over the range casserole but the pan was not big enough spilled over?

It's a old recipe, does anyone know what is a over the range casserole is?

  • That's a weird term, and this is just a wild guess, but maybe it means stovetop and oven safe casserole? Casserole already implies oven safe, but not all casseroles are safe on the stovetop.

    Don't know how it would have made a difference spill-wise. Though it might be flatter than your pan and allow for more evaporation??

    No, but it is obviously bigger than 4 qts.

    Oh, no. Always use a pot WAY too large for whatever you are making-for just this reason.
