Why does the evaporator coils of an AC unit freeze when the unit is low on refrigerant?  What is the science behind it?

    When the inventory of refrigerant is low, there is less mass in the evaporator section.  That causes the pressure to be lower and so then is the temperature of the gas.  This temperature can cause the condensation that normally accumulates on the coils and drips off to freeze.
