Can a great dane eat a whole cat ?

It is most uncertain he would, but is it possible ?

Would there be any indications he did ?

(dog is 170 pounds, adult cat)

Like in one gulp?  No.  A kitten, yes; a full grown cat, no.  A Great Dane could certainly kill and eat a cat, crushing its bones and tearing it apart to eat piece by piece.  It might not eat the head though.  Heads are full of bones, skull and teeth and is too much trouble especially if it already ate the delicious and nutritious organs, muscle and fat.

I would protect the cat. Who cares if the Great Dane eats you though.

Get a Siberian Tiger. Can weigh up 1,200 lbs and average 500-700lbs> Jags are apex predator and has the bite force that could crush a bowling ball.
