Can you poach fillet steak?

    Sure. I have a great recipe for red wine poached fillet steak with celeriac purée. DELICIOUS.

    Only sealed in a vacuum bag at 128°F in a sous vide circulator.

    You can, but you shouldn't - it is a tender cut of meat and needs very little cooking.

    why not, with veggies and some spices you can make a great broth out of it, make noodles soup with poached steak sounds quite tasty

    Poaching something like a steak would be identified as braising the steal. The short answer is yes. Braising meat is normally done to tough cuts of meat because braising, usually for a relatively long time, will make the meat tender. If the cut is a higher quality cut, already tender and would normally be grilled or fried and not normally braised. But it's certainly possible.

    Why? 

    Best flavor would come from the sear and I think you would dilute the flavor having it cooked in water. 

    Now Sous Vide the steak then sear and you have something that would be good.
