Why are RED BELL peppers so expensive ?

"UNRIPE " fruits are typically GREEN

RED BELL pepper are simply FULLY RIPENED "Green " peppers

so they take a little longer on the plant are harvested later

is waiting say 7 more days to Pick .. more LABOR ....

. actually NO its just changes the date to market

its an argument producers make and people accept

there is NO LABOR in waiting

RED BELL peppers resulting in a SWEETER flavor

PRODUCERS can SET a HIGHER STICKER PRICE ..

.. a product is WORTH what the buyer will PAY

    NO BUYER NO PROFIT

if your crop is rotting in the field its not worth much

the REALITY is PEOPLE are willing to pay that higher price

    for the COLOR and sweetness

If you buy them in multi packs they work out cheaper.

They are ripe compared to green. That means they paid rent on the farm for a longer time which you have to recoup.

as the other answers have indicated time is a factor but also spoilage. Since red peppers are riper there is a higher % that will become damaged and begin to spoil before they reach market

Depends on where you are buying them from

First bell peppers are green, then they turn yellow, then they turn red.  So it takes longer for the bell pepper to turn red, which means more time and more money.

Yellow, orange and red peppers use more resources since they're harvested later, making them more expensive. ... If left on the plant to grow, green peppers would eventually turn yellow-orange then red, and their bitter bite would mellow and become sweeter.

Green peppers grow quicker, while colored peppers take longer. More resources and time = greater cost.
