    She prides herself on her wealth.

    You use the reflexive pronoun (herself) because she is both subject and object.

    One shouldn't betray one's country

    You need the pronouns to match, but in this case the object is country, so it is one's

    ...prides herself...

    "One" must be followed by "one's", and "he" must be followed by "his", and she" must be followed by "her", and "they" must be followed by "their". In other words - you must be consistent in the form which you use.

    The first is correct. The second should be One shouldn't betray their country.

    the second version is ambiguous so not correct. The "her" is not defined. You would assume it is not the herself her (or that is what you would have said, and you did not), but there is no other her being discussed, so the sentence is vague at best, as written.

    Strictly speaking, the country should be called "one's" country, since the subject is "one". It is not rare to hear his or their instead, though. "their" is often used when the sex of the single subject is unknown (rather than use his or hers or its) and not appropriate to define as masculine or inanimate, but the old rules of grammar never foresaw that we would find it objectionable to assume male for an unknown person. But we now do, so we grabbed the closest available non-gender term applicable to humans, which unfortunately only exists as a plural.

    In modern usage, it is preferable to be wrong about number instead of sex (gender). Using the wrong number won't offend someone, using him when it turns out to be a she that is represented, is often taken as an offense. ("why do you require it to be a man? It doesn't have to be"). So we avoid the argument before it comes up.

    She prides herself on her wealth. (Alternative: She takes pride in her wealth. One shouldn't betray his (their) country. (however, "One shouldn't betray one's country" is also correct.
