Are the any vegetable crops that can be started from seed in early September and harvested before the end of the year.

strange sunflowers. What are they?
my mother and I planted 4 sunflowers this year from an old bag we had laying around. We don't usually grow them, so we were just planning on using them up to free some space in our drawer. We ended up with what I can only describe as a sunflower tree in our garden, as well as a few in our flower beds we don't remember planting. One of the ones in our beds is red, it also branches out like the tree but not to the same extent. The tree is probably 14 to 15 feet tall. The red one is maybe 5 or 6 feet tall.
The tree unfortunately fell over in a storm so rn it is proped up in a bucket of water alongside our house. A lot of the lower branches snapped off as well.
I've never heard of sunflowers doing this. So any information would be greatly appreciated.
