There's a blog, "Let's Learn Hokkien!" as well as a site called "Tailingua," which deals with the Taiwanese variant of Hokkien (also called "Hoklo" there) and has some good links and books listed about Southern Min. There's also a podcast for learning Penang Hokkien, which is spoken in Northern Malaysia. It's got a pretty big, active community, and I'm sure a few people there could help you out.
If you read Chinese, there are a few Taiwanese sites with learning material as well.
The best way, of course, is to make a Hokkien-speaking friend! (and practise A LOT.) I'd recommend finding someone who will voice chat with you in the language, maybe from Xiamen (厦门), Quanzhou (泉州), or Zhangzhou (漳州) in China, or Malaysia, the Philippines or Singapore. Try the Hokkien Forum on Chineselanguage.org.
